5 Spring Fashion Essentials

Hey yall!

Spring one of my absolute favorite times in regards to fashion. The weather is not too hot, not too cold, and florals are totally acceptable at any time of day (yes please!!). I wanted to share with you a few of my fashion essentials for spring that I absolutely cannot live without! Spring & summer fashion is my personal favorite to wear and shop for. It’s finally time to get rid of all the many winter layers! I absolutely love how easy it is to throw on a dress and some accessories and you don’t have to think twice about it when the weather is nice.

ONE.

A plain white t-shirt

Plain white t-shirts are so simple yet so stylish and go with absolutely anything. Pair it with a floral kimono-style wrap, a light cardigan, or simply some pretty jewelry. you cant go wrong! This will also look good worn simply with jeans, under a blazer, or tucked into a high-waisted skirt

TWO.

Colorful Shoes

Colorful shoes, like the ones in the picture above, can turn a plain outfit into a fashion statement. I love the pop of color that they bring! The favorites that I have I got from Target (clearance aisle, who’s with me?:) )

THREE.

Boho Jewelry

Simple, bohemian style jewelry (like rings and bracelets)  is so great for spring. I love the way this simple but pretty accessories pair with florals and spring colors. A simple set of stacked bracelets can add so much more excitement to a casual spring out, like jeans and a white tee or even florals. My absolute favorite places to get simple, pretty boho jewelry are Pura Vida and Sand Cloud. You can totally get 20% off of your Pura Vida order with my code: CHLOEMCALPIN20 & 15% off of your Sand Cloud purchase with my code: ChloeMcA15

FOUR

Collared shirt.

This is a timeless wardrobe staple that can easily add a touch of class to any outfit.  It looks great when styled with a high waisted skirt, denim shorts, or jeans. These shirts are so comfy and look effortlessly elegant in any outfit.  My sister is totally rocking this outfit (above picture) and I may or may not steal it from her closet… sorry not sorry 🙂

FIVE.

Anything Floral!

Y’all already know my obsession with florals. I really think that they go with everything and look so classy if styled right. The most important thing to keep in mind with florals is to not overdo it. You don’t want to look like you had a flower explode on you 🙂 Keep it simple, and pair your floral piece with a basic. For example, pair a cute floral top with some skinny jeans or a floral printed kimono with a basic tee (like my outfit in the picture above). Let the floral piece be the staple of your outfit! The dress that I’m wearing in the first picture is from Jessa Kae. They have some SUPER cute floral clothing (I have 3 floral dresses from JessaKae now… oops)  and you can get 10% off of your entire purchase with my code: CHLOE10

Side Note: I have some AMAZING news coming to you this Sunday, April 15th! I’m so excited to share it with you all, I’ve been working on it for a few months now and it’s finally ready for the world! Mark your calendars for this Sunday 🙂

Much love,

Chloe♥

The Importance of Giving Back to Your Community

Hey y’all!

Today I wanted to talk about how important it is to give back to your community, and how doing so has shaped the person I am today. Giving back to your community through volunteer groups, non-profit organizations, charity, or other means does so much to help those in need and contribute to the common good. There aren’t enough words in the dictionary to describe the significance of giving back. Even the most simple acts of benevolence — the ones we think of as “random acts of kindness” or “no big deal” — are actually incredibly important.

I read this quote from Pope Francis today and it really inspired me to write this post:

“…have the courage to go against the tide of this culture…the culture of exclusion, of rejection, is spreading…There is no place for the elderly or for the unwanted child; there is no time for that poor person in the street. Be servants of communion and of the culture of encounter!”

– Pope Francis

I have personally volunteered at my local soup kitchen many times, and I love seeing and hearing the stories of the people who come in to have a meal there. One of the most amazing things that I have noticed as I volunteer there is that anytime I ask any one of the people who walk through the door about their day, they always respond with a positive, happy response. These people are going through the worst times in their lives, and yet their genuine response is always a positive one. Having the opportunity to connect with the people in my community through volunteer work never fails to make me want to better myself as a person, and it also just lights up my day. Not only does volunteering impact the lives of others, but it has also greatly impacted my life as well. Giving back to my community has not only shown me how to love others the way we as Christians are meant to, but it has taught me the importance of being thankful for what I have and taught me that happiness does not lie in the material things of this world.

a514dca6-c99f-4209-bad8-2e415e295ef1

Volunteering at your local soup kitchen, donating money to charity, and donating old clothes to St. Vincent de Paul are just a few ways you can make an impact in your community. Not only are you helping others when you volunteer, you are also bettering yourself by being the hands and feet of Christ as we are all called to be.

Now go out and do some good in this world! 🙂

Much love,

Chloe♥

My Spring Playlist

Hey y’all!

Today I just wanted to share with you my playlist for this Spring and Summer. This past week has had a few warm and sunny days, and this weather has really fueled my excitement for the warmer weather. This playlist is sure to be a great start to your spring break! I made this playlist because I recently got a new car (thank goodness) and decided my new car needed some new music. This playlist has some oldies, some chill vibe music, and of course, some Jesus music for that early morning ride to mass. I hope you all love this playlist as much as I do!

I Choose The Sky

Hey yall!

I have collaborated with one of the sweetest bloggers I know to bring you a few books that have influenced our faith as Catholic women. Read about more books and check out Maddy’s blog here! I am so blessed to be able to collaborate with such a faith-filled young woman and I hope you all take the time to go check out her blog!

The book that I chose to write about is a small but impactful devotional by Emily Wilson. In this post I’m going to be telling y’all a little about how this book has influenced my faith journey, and I invite you all to go read the full post (linked at the end of this post) on No Greater Love!

I Choose The Sky by Emily Wilson has immensely influenced my faith journey,  and I cannot stress enough how much I believe each and every young woman should read this book! This book focuses on 17 women mentioned in the Bible who chose to lift their eyes towards heaven by living lives of great faith. Reflecting on women such as Tabitha, the crippled woman, Mary, and Martha has shown me that no matter what situation I may be in, Jesus still has an immense love for me. This book can help women of all ages to grow their faith and has changed the way I look at myself and the world. It was so powerful to re-read the stories of those women. Emily’s reflections on who these women are and what we as Catholic women can learn from them truly touched my heart. This book really helped to deepen my understanding of my identity in Christ as a woman, and I hope everyone who reads it can find a new light and a new understanding of these often-overlooked women in the Bible. e1ff6e80-a404-4296-9956-face80be0062Something that stood out to me the most in this book is Emily’s reflection on the story of the crippled woman in the Bible. After reading the story of the crippled woman, the book reflects on our perspectives in life, and how we can choose our perspective. I found this part of the book to be so inspirational; I, too, can often be like the crippled woman, constantly looking down and not having the spiritual strength to raise my eyes to heaven. Choosing to focus on the sky, not just physically, but spiritually, has opened up my world in a new light. Although I still find it hard to “choose the sky” sometimes, I have that conscious effort pushing me to focus on the good. Here’s an excerpt from this section of Emily’s book that I love:

“Our perspective and our outlook have an amazing impact on our day-to-day lives. Our perspective dictates how our days seem to go, how we treat others, how we treat ourselves, and how we see the world. We have the power to choose whether we approach life with positivity or negativity. We make the decision to be cheerful, loving, and kind, even when life is challenging…or to give in to envy, self-loathing, or despair when we just wish things were different, or better, or easier. We get to decide which outlook we have: Are you looking at the ground, or are you looking up at the sky?

“If given the choice between the ground and the sky, I choose the sky”

-Emily Wilson

I hope you all are inspired to “choose the sky”, and I hope you all have the opportunity to read this book. I’ll link Emily Wilson’s website below so you can take a look!

Much love,

Chloe♥

Sephora Haul!

Hey y’all!

Today is such a bright and sunny day and everything is so happy. I haven’t posted in a while, I know, but I’ll get back to posting regularly soon. Classes have gotten crazy and time has gotten away from me these past few weeks, and since school is my main priority right now, blog posts might be posted at weird times. I’ll get back on track with posting every Saturday soon, I promise! Anyway, this past week I went to Sephora (stress shopping… anyone else do that?) with the intention of getting new foundation but accidentally bought WAY too many things. I decided to write this post telling y’all about the products and my thoughts on each of them!

ESTEE LAUDER Gentle Eye Makeup Remover

As you may know, I have a little obsession with mascara. Taking off mascara every night has really taken a toll on my eyelashes, due to the scrubbing and harsh cleansers. I’m so happy I found this eye makeup remover by Estee Lauder, which takes off mascara and eye makeup (even waterproof!!) so easily and quickly.

TOO FACED Born This Way Foundation

Y’all already know about my obsession with this foundation. It is so hydrating and hardly feels like you’re wearing foundation at all. I also occasionally mix this with my moisturizer (Clinique Moisture Surge gel-creme) to create more of a tinted moisturizer on days I don’t want or need a lot of coverage. This foundation is infused with coconut water to help replenish the skin’s moisture levels and contains Alpine rose to brighten skin’s appearance. Fun fact: I’ve never purchased the same foundation twice before discovering this foundation. It’s THAT good.

TARTE Wide Awake Eye Set

This set is packed with all of your eye care essentials! It comes with a travel-size Lights, Camera, Lashes Mascara; Maracuja C-Brighter Eye Treatment; and one set of the Pack Your Bags 911 Undereye Rescue Patches, all for only $12. It’s also all vegan! This mascara is so volumizing and lengthening, I only need to use one coat. It is also the perfect size to stick in your purse or bag for traveling, in case of road trip touch-ups. The eye cream is packed with a complex of antioxidant plant extracts, light-reflecting particles, and essential fatty acids to hydrate and brighten under eyes. Unlike most eye creams that I have tried, this one doesn’t feel greasy or heavy, therefore much more suitable for everyday use. Finally, these little eye treatment patches work wonders! One use, and my dark circles, which were seriously bad from a weekend of late-night studying were seriously reduced. Yall, these are magical.

SEPHORA COLLECTION LashCraft Big Volume Mascara

As some of you may know, I am very particular (and obsessive) when it comes to mascaras. I was planning to re-purchase another Sephora collection mascara that I LOVED, only to find that they didn’t carry it anymore. What was I supposed to do, find a DIFFERENT mascara? No. Way. Luckily, I picked up this one because it was super cute and also only $14 (yes I spent too much money at Sephora, but I’m still on a budget. don’t judge). This mascara also contains jojoba oil, which allows you to build lashes with multiple coats while not flaking, smudging, or clumping. This stuff is seriously good!

URBAN DECAY Vice Lipstick in shade Stark Naked

I have been searching for the perfect nude lipstick for SO LONG, and I have finally found it. This lipstick by Urban Decay is velvety matte but doesn’t feel like I’m wearing lipstick at all. It’s super moisturizing and, unlike most matte lipsticks, don’t dry out your lips or get cakey. It is also packed with so many good-for-your-skin ingredients, such as aloe vera, jojoba, avocado, and babassu oils which help nourish and soften lips. It is also formulated with Illipe butter, which is derived from Malaysian illipe trees and provides long-lasting moisture.  This lipstick is also infused with vitamins C and E, which help to deliver a hint of antioxidants.

(My cat decided she wanted to join in the festivities of shooting a few pictures for this post)

That’s a wrap! I really hope y’all enjoyed this post, and I can’t wait to share with you more of my favorite products! My next post will be about a book that has seriously had an impact on my faith life, and I can’t wait to share it with you all, It should be posted in the next week or two. (Regular posting coming soon, I pinky promise 🙂 )

Much love and many blessings,

Chloe ♥

Staying Focused On What Matters

Hey y’all!

These past few weeks have been pretty crazy; I have been so busy with school, work, and so many other things.  My second semester of college is in full swing, and although I’m loving (almost) every minute of my classes, it can be pretty difficult to stay on top of things sometimes. Homework due here, essay due there, and chemistry labs and calculus tests to top it all. Not only has school been keeping me busy, but I’ve had to juggle teaching dance classes, relationships, and having time to stop and take a breath every once and a while.

That being said, all this craziness of life has made me realize the importance of staying focused, not only on school but on the things that matter most.  I have also realized that it can be a struggle to effectively divide your attention between so many things (i.e school, work, relationships, going to the gym, and having “me” time, just to name a few.)

IMG_8470.JPG

The first thing that has kept me focused lately is writing everything down. And I don’t just mean the big stuff either: plan out every detail of your day.  I like writing down all of my big, pressing tasks first, then fill in the blanks of when to go to the gym, what I need to study, and even when to get on social media. This really helps me to not waste time by eliminating the constant worry of when I’m going to get something done, and it also helps me to not aimlessly waste time on Instagram :). Find a planner you love and use it! I absolutely love the Simplified Planner by Emily Ley, it has so much room for me to plan out my day.

Eliminate clutter. Whether it is your workspace, your mind, or the 12 tabs you have open on your browser, clutter is one of the biggest distractions that I have in life. Whether you dedicate 5 minutes a day to do yoga, clean your desk, or organize your workspace, it helps so much!

Stop comparing your life to the lives you see on social media. This can be hard, especially since a lot of us do this without realizing it. Social media makes it so easy for people to only highlight what they want to portray themselves as in their lives and relationships without showing the real-life aspects of it. Stopping that constant comparison can be hard to do, and is something that I struggle with on a daily basis. My daily scrolls through Instagram always result in negative thoughts of comparison. I subconsciously compare my blog, outfit, makeup, hair, weight, lifestyle, and so forth. Limiting my time on social media and unfollowing those accounts that I found myself comparing my life to has helped me with this so much is. Life is too short waste time comparing your real life to the “perfect” strategically highlighted areas of other’s lives.

Last but definitely not least is prayer. Praying about your worries and giving everything that is on your mind to God has made a huge difference in my life lately. Even if things may not go the way YOU planned, you need to realize everything happens in Gods timing. Pray about it! Give it all for the glory of God.

Heres a list so you don’t forget 🙂

  • Write everything down
  • Eliminate clutter
  • Stop comparing
  • And most importantly, PRAYER

Even if you can’t eliminate everything negative, you can eliminate the unnecessary.

I hope these things can help you all stay focused on what matters. Even if you can’t eliminate everything negative, you can eliminate the unnecessary. This topic is something that I have struggled with, and I hope these things that help me can help you too.

Much love,

Chloe♥

Blueberry Coconut Overnight Oats

Hey y’all!

This semester, my goal is to make more healthy breakfasts and to not just settle for cereal and almond milk. Not only do overnight oats have WAY more nutrients than most cereal, they are packed with protein to keep you full all day (perfect for a long day of classes)! Here I’ll be giving yall one of my  favorite overnight oat recipes These overnight oats are rich, creamy, and filled with fresh fruit. It’s truly like eating dessert for breakfast! And, better yet, there’s no prep time! Just mix them up the night before (this takes 5 minutes) and store them in easy grab-n-go airtight containers for easy breakfasts throughout the week. You can eat these cold & straight from the jar, or heat them up for a nice warm breakfast. Enjoy!

Blueberry Kale Smoothie

With spring on the way, fresh food has been sounding so good. I wanted to share with you my absolute favorite smoothie recipe. This smoothie has about 12 grams of protein and is under 300 calories! For all of you who don’t like kale: I promise you can hardly taste it, and kale adds such great nutrients! This smoothie takes only 5 minutes and is a perfect on-the-go breakfast. Smoothies are really hit-or-miss for me; sometimes I like them, sometimes I don’t. Despite that, this smoothie never disappoints! I hope yall love it as much as I do.

Blueberry Kale Smoothie

5 January Favorites

Hey Y’all!

January has been one of those months that takes forever and yet feels so short. Does anyone else feel this way, or is it just me?  This past week has been somewhat hectic, despite having a few days of canceled classes because of snow. I’m trying to re-focus and get back into my routine of blogging, studying, going to the gym, and all of my other weekly focuses. I wanted to share with y’all a few of my favorite products and clothing items from this month, and I hope you love them as much as I do!

Black Classic Rose Maxi from JessaKae

Y’all… I’m in love with this dress! You have probably seen it so many times on my Instagram (if not, go follow me here). It’s so comfortable and has pockets… what’s not to love? The fabric is so soft and stretchy. I’ve worn this so many times in the past few weeks just for the sake of wearing it because I love it THAT much. It also comes in blush, navy, and ivory! Also, if you want to order this lovely dress from Jessakae, use my code CHLOE10 to get 10% off of your entire order!

Naked Ultimate Basics Palette

This eyeshadow palette has everything needed for so many different matte eye looks. The shades in Naked Ultimate Basics are neutral enough for everything from cool skin tones to olive complexions to darker skin.  It comes with 12 matte shadows that can be worn as light, everyday looms to smokey nighttime looks. It also comes with a double ended brush, one side that is a fluffy blending brush and the other that’s a smaller, denser smudging brush.

Colorful Shoes

I love colorful shoes right now! They add such pop and go with more outfits than you might think. I bought two pairs from Target last week that I’m obsessed with. Bright shoes don’t necessarily need to be worn with bright clothing. If you’re fearful of looking like a child’s finger-painting by overloading on the colors, let your bright shoes be a simple pop of color against neutrals, like in the picture above.

Too Faced Melted Metal Lipstick in Peony

I’m usually not a fan of bright pink OR sparkly lip colors, but the Too Faced Melted lipsticks are an exception. It applies so smoothly and stays on! This color is so gorgeous when paired with a neutral toned outfit. Love, love, love!

Aerie City Sweatshirt

I wear leggings and sweatshirts to my 9 am classes a LOT. This sweatshirt from Aerie is perfect for that! It’s long, soft, and super comfy, but still looks cute enough to wear in public : ) Pair this with leggings and cute tennis shoes for the perfect “I woke up like this” outfit for those early a.m classes.

Alright y’all, that’s a wrap!

Much love,

Chloe♥

My 10 Minute Everyday Fitness Routine

Hey y’all!

I’ve gotten a lot of questions about my daily workout routine and how I stay in shape as a college student who has to study, work, and who hardly has time for anything else. So, today I’ll be sharing my 10-minute workout that I (try to) do every day!  This workout is quick but works your legs, arms, and abs. Whether it works for you to do this every day, once a week, or three times a week, it’ll leave you sweating and work most of your muscles. You can do this set once as a quick workout, or do it as a circuit and repeat as many times as you want for a serious burn.

Let’s go!

My 10 Minute Everyday Workout

  • Warm up with 1 minute jumping jacks
  • Continue with 2 minute run in place
  • 1-minute of ab crunches
  • 1-minute of mountain climbers
  • 1-minute break… breathe, breathe, breathe!
  • 30 seconds of push-ups
  • 1-minute 30 seconds of squats
  • 1-minute plank
  • 1-minute squat jumps

To cool down, I like to do 5 minutes of yoga, which calms everything, slows my breath and heart rate, and stretches everything out. There are lots of yoga sequences on Pinterest that I really enjoy, find my favorite here! I like to stick to the same one every time, so find one you like and stick to it! Or switch it up… You do you. I really hope you enjoy my fitness routine, go forth and do your squats 🙂

Much love,

Chloe♥

3 Ways I Stay Rooted In My Faith As A Catholic College Student

Hey y’all! Just realized I’ve talked about two pretty deep subjects in the past week. New year, new me? Or maybe my brain just isn’t dead from homework/finals/essays? Anyway, I want to talk with y’all about some ways that help me stay rooted in my faith as a Catholic college student, which, I admit, can be pretty stinking hard sometimes. I saw this picture on Blessed Is She‘s Instagram, and the words in the photo really inspired me to write this.  I hope this inspires and helps not only Catholic college students but people of all ages and all religions that want to become closer to God.

Sometimes I find it hard to reflect His light in the darkness of this world. It can be so tempting, especially as a college student, to brush aside our faith in order to appear more like others you know who may not care as deeply about their faith. It can be hard to be strong in your faith at all times and to be the light.  It’s so easy to get caught up trying to live in the lives of others rather than trying to live as we are called to as followers of Christ. As Catholics, we are called to be a light to the world and to shine the light of God upon others who may not now His everlasting love.

ONE.

If there’s a Catholic campus ministry at your college, go check it out! I have met some of the most amazing people I know at my college’s campus ministry, who are college students just like me who also want to grow deeper in their faith. The meetings we have every week make me think deeper into the words of God and inspire me to be a better Catholic.

TWO.

I know, it sounds cliche, but get a bible that you love. I recently received the Catholic Journaling Bible from Blessed Is She, which is absolutely beautiful and includes wide margins with lines for note taking, endnotes, and footnotes, an easy to read one column format and hand-lettered verses for each book. It’s SO PRETTY♥ This is helpful for me because I can write down any thoughts I have while reading, and I also just love flipping through and reading the hand-lettered verses in each book.

THREE.

Another cliche, but I’m serious about this. Go. To. Mass. And not just on Sundays, either. Look up your church’s mass schedule, find a time that works for you, add it to your schedule (Write it down!), and stick to that schedule. On the other hand, look up mass times for the different Catholic Churches in your area, because they might have different mass times! Go when it works for you to go. Most daily masses are usually about 30-45 minutes long at most! I like to go in the morning before my 9:30 am class because my parish has 6:15 mass on Tuesday.  I love starting my day with mass because it sets such a good foundation for that day.

I hope this inspires and helps not only Catholic college students but people of all ages and all religions that want to become closer to God.

Much love,

Chloe♥

New Years Resolutions + Being More

Hey yall!

Today’s post is going to be a little more real. I want to let my guard down and talk about my new year’s resolutions, which tie a little into the name of this blog. I wanted my new year’s resolutions this year to not be about the usual “new years resolutions”, such as working out more, losing weight, saving money, or about other physical things. Yes, those are good goals and I applaud anyone who has goals such as those, but I wanted this year for me to be deeper than surface level goals.

IMG_8476.JPG

I started this blog to keep me on track with the things that matter most to me, and I chose this name for my blog because that is what I want to focus on. I want to simply focus on the joy of being, the joy of existing, and finding joy in whatever comes my way. This is what I like to think of as the simple joy of being.

I want to tell y’all about my main resolution for 2018, which is to simply be more. Be more kind. Be more patient. Be more present, be more welcoming, be more thankful. I want to really be who I am meant to be and who God intended me to be, which is more than I am now. I want to be more driven, be more determined, be more honest with myself. I want to be more excited about the small moments, be more loving towards people I may not agree with, and be more helpful to the people around me. Focusing on being more lets us focus on what really matters in life and keeps us from being too caught up in the distractions of daily life.

I want to find joy in small moments not become caught up in the tangible things of daily life. I want to experience the joy that comes from God and the joy of simply being. or, as the name of this blog puts it, the simple joy of being. I encourage you all to join this journey with me and to live in the simple joy of being. ♥

My Fresh Pressed Juice for Happy Skin

Hey Y’all!

I love making homemade juices, which is why I’ll be sharing with you my favorite skin-happy juice recipe! This is so easy to make, just pop everything in your juicer, and you’re done! This recipe makes approximately a cup and a half of juice (I drank it all before I remembered to measure it), but feel free to double the recipe and save some for later, or adjust the amount of the ingredients to make it your own!

This juice is packed with vitamins and minerals, but its especially high in antioxidants. If you’re like most people, you want smooth, healthy skin, but maybe you don’t want to look through hundreds of chemical-filled skincare products to get it. That’s where antioxidants can help! Incorporating the right antioxidants into your diet and skin care routine can have a positive effect on your skin, which means a brighter, smoother, healthier you.

Antioxidants are nutrients (vitamins and minerals) and enzymes (proteins inside your body) that can help to prevent and repair damage to your body’s tissue. Antioxidants do this by slowing or stopping the effect of free radicals, which start oxidation — a process that causes damage from oxygen that can lead to cell dysfunction. If you’ve seen a peeled apple turn brown, you’ve seen oxidation in action. As antioxidants block the effects of free radicals, they end up being oxidized. This is why it’s important to constantly replenish your supply of antioxidants!

Heres why each ingredient is good for you.

  • Apples are rich in essential antioxidants, which are so good for your skin.
  • Kale is also packed with antioxidants, so another skin-happy ingredient! It also has more iron than beef per calorie and more calcium than milk per calorie.
  • Carrots, which are also high in antioxidants, are one of the top contributors of vitamin A, also known as the powerhouse vitamin for so much of our body. Carrots also provide high amounts of vitamins C, D, E, and K, as well as many minerals such as magnesium, potassium, and calcium.
  • Clementines are dense with vitamins, including vitamin A, vitamin B-6, niacin, thiamine and pantothenic acid, but they are especially high in folate and vitamin C. They’re also another fruit that is packed with antioxidants, which means happy happy skin!

Juice for Happy Skin

Ingredients

  • 2 Apples
  • 2 Clementine Oranges, one with the peel and one without
  • 3 Cups kale
  • 2 Handfuls baby carrots (or you can use regular carrots, maybe use 2 or 3)

Directions

Juice all ingredients in a juicer and enjoy!

Kale & Broccoli Salad

Hey yall!

This kale & broccoli salad is so easy to make! Only a few ingredients, a couple of minutes and you can have a huge bowl all to yourself. It’s packed with superfoods, nuts, seeds, and dried berries, and is so delicious. This salad pairs perfectly with my Maple Vinaigrette, which you can find here. It’s sweet, tangy, and goes great with the slight bitterness of the kale.

I made this recipe for Christmas, and it was so nice to have a healthy-but-yummy dish to have alongside the abundance of casseroles and cheesy ravioli (which we make ourselves! I’ll post the ravioli recipe soon!).

Kale & Broccoli Salad

Ingredients

  • 1 bunch broccoli, chopped
  • 4 cups of kale
  • 3/4 cup pecans
  • 1/2 cup dried cranberries
  • 2 Tbs unsalted sunflower seeds

Directions

Toss kale, broccoli, pecans, and dried cranberries. top with sunflower seeds and maple vinaigrette. Note: I like tossing with the vinaigrette about 15 minutes before I serve it because the kale will soften in the vinaigrette. Serve & enjoy!

Maple Vinaigrette

Hey yall!

This Maple Vinaigrette Tastes amazing! It’s sweet, tangy, and perfect to go on top of any salad, plus, It comes together so quickly. It can also be prepared in advance and kept in the refrigerator in an airtight container for up to 3 days.

This vinaigrette has just the right amount of sweetness to curb the flavor of the vinegar and lemon and takes about 2 minutes to make. You can use this dressing on just about any salad you can imagine, but goes so well with my Kale & Broccoli salad (aka my latest obsession).

Gluten Free “Oreo” Balls

Hey y’all!

It’s the holiday season, and sometimes it can be hard to find a good gluten-free dessert recipe to have at parties. I found this recipe from Hello Gluten Free, and I’m making these to have on Christmas day! Oreo balls have only 3 ingredients: Oreos, cream cheese, and white chocolate. Sadly, original Oreos aren’t gluten-free, but gluten-free options are available! I used Glutino cookies, which have SUCH good chocolate flavor. I think these are way better than Oreos, which are mainly just sugar. If you aren’t gluten-free, you can totally use regular Oreos with this same recipe! I haven’t tried it with plain Oreos (disclaimer), but I’m sure it’ll taste good!

Some things I noticed while making these:

The mix was pretty soft before rolling them into balls, so I refrigerated the mix in a bowl for 15 mins before rolling them into balls. This helped the mix to not stick all over your hands and turn into a gooey mess.

I used 33 cookies, but the recipe calls for 30. The last three I crumbled by hand and mixed into the bowl of already processed cream cheese and cookies to give it a little more texture.

Buy two packs of cookies! A pack only comes with about 20, so you’ll need the extra cookies unless you make half of a recipe. (Also means more cookies to eat plain… yes please!)

Buy two packages of white chocolate chips. I ran out of white chocolate about 2/3rd of the way through dipping the Oreo balls, so some ended up just being drizzled with white chocolate, then I used a little dark chocolate as well. They were pretty, but they needed more coverage.

That being said, let’s get started!

5 Tips On How To Stay In Shape With A Busy Schedule

Hey y’all! With a busy schedule like mine, I sometimes find it hard to stay in shape. Between classes, work, sleep, studying, and other day-to-day things, it gets a little tough to find time to squeeze in a workout. In this post, I’m going to give y’all some tips on what to do to stay in shape when you have a busy schedule. Let’s get started!

Processed with VSCO with a6 preset

ONE.

Do a 3-minute workout before you get in the shower or when you get in or out of bed. For example, every time you get out of bed in the morning do 100 ab crunches, 10 push-ups, 20 squats, and 30 calf raises. It’s fast, easy, and wakes you up and gives you endorphins to start your day on a good note. As Elle Woods from Legally Blonde says, “exercise gives you endorphins, endorphins make you happy, and happy people don’t kill their husbands. they just don’t.”

TWO.

Take the stairs to class instead of the elevator. And let me tell you, that elevator looks really lovely at 8:00 am when your course is on the 3rd floor. But taking the stairs adds a little workout to your day, and just think: even if you didn’t do anything else today, you walked up a few flights of stairs. Be proud.

THREE.

Take a pure barre class or other fitness class that’s in your area. Lots of places offer cycling classes, barre classes, yoga classes, or pilates classes where you can just show up and pay for a class. These classes are usually only an hour-long and really work all of your muscles.  Also, a lot of gyms have classes like these every day, so if you have a gym membership, you can usually go to these classes at your gym for free.

Processed with VSCO with a6 presetFOUR.

Go for a walk. Yeah, I know, a lot of people don’t have time. But on weekends, or after dinner when your usually scrolling through Instagram (and hopefully following @simplejoyofbeing), take 15/30 minutes and go outside if it’s a beautiful day. I love being outside, and sometimes that’s all you need.

FIVE.

Simply find the time. I know, easier said than done. But this last semester I blocked off an hour and a half on Mondays, Wednesdays, and Fridays that I would go to the gym. Mondays & Wednesdays, I would go right after I got out of class & finished homework at 3pm. Fridays, I went in the mornings before grocery shopping. After a few weeks, I got into a habit of going and HAD to go, or I felt like I didn’t accomplish my day. Next semester, I’m going to figure out a different time to go, but I’m going to block off the time and go to the gym never the less. Once you figure out a day and a time to go to the gym or do a home workout, you get into the habit, and it really makes a big difference.

I hope you found this helpful! Now go workout instead of being on my blog 🙂

Much Love,

Chloe

My Top 10 Beauty Products

Hey yall! I’m going to be sharing with you my favorite beauty products that I use every single day (almost). I usually try to go for a more natural overall look, but I do have days when I really feel like rocking some winged liner. Let’s get started!

FACE.

My favorite foundation and primer are the Too Faced  Born This Way Foundation in the shade Porcelain (applied with the Real Techniques expert face brush), and the Hangover Replenishing Face Primer, also by Too Faced. These are both so hydrating and it hardly feels like you’re wearing foundation. I set my foundation with a fluffy brush and the NYX Pressed HD Finishing Powder in Translucent. For Bronzer, I use the Benefit Hoola Bronzer, which I have in their Cheekathon Blush Palette. My favorite blush is the Tarte Amazonian Clay 12 hour blush in the shade Paaarty. (I love it). These products have such a good color and are nicely pigmented, and blend so nicely.

IMG_7717.JPG

EYES.

I’ve started using the Colourpop Take Me Home eyeshadow palette, which I absolutely love because it’s so versatile. The palette only has six shades, but those eyeshadows are all you need for either a natural look or a more smokey, sparkly look. I use the light peachy shade on my lid, then use the slightly darker warm color for my crease. If I’m feeling fancy, I’ll thinly line my eyes with Revlon’s Colorstay Skinny Liquid Liner in the shade Blackout, but I usually just go without eyeliner. I curl my eyelashes and apply a few coats of Sephora’s Full Action Extreme Effect Mascara in the color black. For brows, I’ll use the NYX Micro Brow Pencil in Ash Brown to shape my eyebrows and define them a bit.

And that’s it! Somedays I wear makeup, other days (like today), I’ll just go without it. It totally doesn’t matter whether you wear super glam makeup every day, super natural makeup every day, go without every day, or mix it up. (like me!). I hope yall enjoyed this and don’t forget to check out my Winter Skincare Favorites!

My Top 5 Places to Eat Along 30A

Hey yall! I’m going to share my absolute favorite places to eat along 30A in South Walton, Florida. Located in Northwest Florida, South Walton is continuously recognized as a premier destination that has 26 miles of sugar-white sand beaches, turquoise water, and 16 beachside neighborhoods, each with its own personality and style. It was so hard to pick my favorites because I’ve loved every restaurant I’ve been to along 30A.

ONE.

Bud & Alley’s Taco Bar. Located in Seaside, this taco bar probably has the best burrito I’ve ever eaten. I always get the veggie burrito, which has rice, pinto beans, shaved cabbage, pico de gallo, cilantro, and queso. I order it without the cabbage, and it is incredible.

TWO.

LaCocina Mexican Grill. In Seacrest Beach, Florida, is this fantastic Mexican restaurant. Their chips and queso are delicious along with the Veggie Burrito, which has onions, peppers, black beans, and cheese. So delicious!

img_6105THREE.

Amavida Coffee and Tea. This is my absolute favorite coffee shop I’ve been to. Their iced coffees are fantastic, as well as their food. They have super yummy muffins, breakfast sandwiches, as well as rice and beans in select stores. I’ve been to a lot of coffee shops around the country, and this one is definitely my favorite.

FOUR.

Cowgirl Kitchen. Located in Rosemary Beach, Cowgirl Kitchen has a casual & fun atmosphere for breakfast, lunch, and dinner. Whenever I go, I love to get the Vegetarian Green Chile Tacos.  These tacos consist of black bean patties topped with hatch green chile creme, roasted corn salad, queso fresco, avocado. These. Are. So. Good. I haven’t been back to South Walton since I started eating gluten-free, so as soon as I go, I’ll update this post with my favorite gluten-free foods at these places!

FIVE.

Raw & Juicy. Located at the corner of County Highway 30A and Central Square in Seaside, Florida, Raw & Juicy is a retro airstream café that serves fresh organic salads, cold-pressed organic juices, protein shakes, freshly prepared foods, and healthy snacks prepared fresh daily. Their smoothies are incredible, and so is the food!

Alright y’all, that’s a wrap! I hope you get the chance to enjoy all of this yummy food one day soon!

Much love,

Chloe

How To Eat Clean On Roadtrips

Hey y’all! When I travel, I find it hard to not just go through a drive-through and get a large order of fries and a sweet tea. And, although I try to eat semi-healthily when I travel, somehow fries and sweet tea still magically end up next to me. In this post, I’m going to be telling you a little about how I eat clean while traveling. (there’s no shame in fries though. A Chick-fil-a is on my way home from class and you can bet your bottom dollar that those beautiful waffle fries end up in my cup holder with some Polynesian sauce at least once a week. it’s called balance. don’t judge.)

ONE.

Chick-fil-a. As much as I love their fries, I sometimes feel the need to get a salad or yogurt. For breakfast, I like getting their Greek yogurt parfait, and for lunch/dinner, I love their superfood side salad. This salad has kale, broccoli, raisins, and a yummy vinaigrette. Super healthy, tasty, and fast!

TWO.

Chipotle. Ok, I know, there aren’t many chipotles when you’re on a road trip. But this is my favorite place to go when I want a quick, healthy, filling meal. I get a veggie bowl with white rice, black beans, corn salsa, salsa verde, cheese, guac, and a side of hot salsa. (I really like salsa). This bowl is relatively healthy and packed with protein from the beans. You also get your carbs from the rice and healthy fats from the guac, so this bowl is the whole deal. It is also a TON of food and bowl usually lasts me two meals.

THREE.

Taco Bell. Ok, to be honest, taco bell isn’t high on my list. But when it’s been too many hours of driving through nothing but farms (this has happened many times, see the picture below) and you get to a little town with a taco bell and maybe a McDonald’s and you are HUNGRY,  go for the Taco Bell and get their Veggie Power bowl. It has rice, beans, lettuce, sour cream, guac, and pico, so it’s decently healthy, I just normally try go for better quality foods. But hey, its actually really good, and it fills you up on long road trips.

IMG_7691.PNG

FOUR.

Starbucks. They have some pretty good options regarding food, and my favorite is the Cheese & Fruit Protein Box. This box has brie, cheddar, and gouda with multigrain crackers and a full cup of fruit. They sell these in most Starbucks stores, so they’re pretty available on road trips. (also Starbucks has packets of sriracha hot sauce. If you know me, you know I eat hot sauce on almost everything, so I stock up on these little packets on road trips.)( also pt. 2 the one thing I don’t like about being up north is the lack of sweet tea. Therefore, southern girl here needs her sweet tea and tried to be clever by ordering a sweetened black tea at a Starbucks in Chicago. It was sub-par as far as southern sweet tea goes, and reminded me that there’s nothing quite like good old southern sweet tea)

IMG_7692

FIVE.

Publix / Target  / any grocery store with a deli. For when you have a little more time to spare, supermarket delis have a great selection of on-the-go salads, sandwiches, and other healthy snacks. You can even stock up on some bananas, veggie chips, and other healthy snacks while you’re there to avoid the “it’s been hours driving through farmland with no food and there’s only a taco bell and I’m tired of drive-thrus” scenario.

Alright y’all, that’s a wrap!

Keep it classy.
